1. 微生物風險評估:
利用預測微生物學建立病原菌於食品基質之生長與殺菌模型,應用於預測環境因子 (如:溫度、水活性、鹽度) 對於生長動力學參數 (如:μmax, λ, Ymax) 與熱失活動力學參數 (如:D-value,
z-value) 之影響,可供後續套用各種情境 (scenario) 下之微生物暴露評估。目前已建立金黃色葡萄球菌於肉鬆飯糰與生菜沙拉之一級與二級生長預測模式,以及泌尿道致病性大腸桿菌於牛肉之生長模型和舒肥雞胸肉之殺菌模型,並完成驗證試驗,接著可基於臺灣的冷鏈運輸與消費者的飲食習慣,進行即時餐食從工廠端至消費者端之微生物風險評估。相關成果發表於IAFP annual meeting 2018; IAFP annual meeting

2. 食品毒理與安全性評估:
因應機能性食品產品產業鏈之研發需求,針對可供食品食用原料 (如: 天麻、菇類、大蒜精油),進行基因毒性試驗 (如:沙門氏菌回復突變試驗、體外哺乳類細胞之染色體異常分析、囓齒類周邊血液之微核測試法) 以及 28 天餵食毒性試驗,藉以測定無毒性顯示之劑量 (NOAEL),以利未來開發成為健康食品,相關成果發表於AsiaTOX 2018; CGCM 2018; Regul.

3. 植化素之癌症化學預防:
以細胞模式與動物模式探討天然產物 (natural products) 對於癌症生成的預防與抑制效果,並探究其誘導癌細胞株之細胞凋亡 (apoptosis)、細胞週期停滯
(cell cycle arrest)、細胞自噬 (autophagy) 及細胞訊息傳遞
